Let’s start at the beginning…long, long ago…I’m kidding. In this blog I want to point out, in a brief overview, the benefits of ghee and why, in some cases, I prefer it over butter (grass-fed).
Ghee is clarified butter. First, let me tell you what clarified butter is. You could actually make it at home yourself. It’s quite a simple process. Take a pound of unsalted grass-fed butter and put it into a pan on medium heat. Allow it to cook for about 10 minutes until the milk solids sink to the bottom. The beautiful golden liquid is ghee. When you remove the milk protein, you remove the lactose and clarify it.
Why is it better than butter? The simple answer is the TASTE! Clarified butter has a very full flavor. In my humble opinion, it doesn’t have any kind of an oily flavor at all. It’s like a dark roast coffee compared to a light roast.
Now for the medical values: 1) By clarifying it, you’re eliminating the dairy from it. Now people who are allergic to dairy can eat butter! 2) By eliminating the dairy, you get all the antioxidant potential without the interference of lactose. 3) Ghee possesses butyric acid, which means that it can reduce inflammation that causes irritation to the digestive tract. It’s even being suggested as a dietary addition for people with ulcerative colitis.
And finally, why grass-fed? Well that answer is quite simple. When cows are given the free range to eat what is natural to them and not fed with pesticide covered grain, our bodies get the REAL benefits of what the cow has to offer. I highly recommend always eating grass-fed beef products.
